Fats, Oils, and Grease Program

The Connecticut Department of Environmental Protection (DEEP), under the authority of Section 22a-430-3(a) of the General Statutes, requires all municipalities to administer a permit program for certain food service establishments for the purposes of minimizing the amounts of fats, oils and grease that discharge to a public sanitary sewer system. All Class III or Class IV food service establishments are now required to obtain a FOG permit from the Town of Manchester and to comply with the established permit(PDF, 1MB) .
